Picked at 24 brix from the meter by meter Grenache planting on the steep hillside of Islay hill. the wine was 100% destemmed and fermented with native yeast in an open top 1 ton fermentor. On skins for 10 days and then gently pressed in a basket press. Aged on lees for 10 months, bottled without finning or filtering
