This old-fashioned recipe is made with organic green beans, onions, and most importantly, pancetta.
Ingredients:
2 pounds of green beans
6 slices of pancetta
½ cup of yellow onion, diced
1 1/2 cups of chicken broth
Directions:
Step 1: Place pancetta in the freezer for 10-15 minutes to make dicing easier! Dice pancetta and cook over medium heat in a saucepan until soft. Undercook the pancetta just a bit as it will continue to cook with onions and beans. Don’t get rid of the pancetta grease!
Step 2: Add onions and saute with the pancetta until transparent.
Step 3: Add green beans and season with pepper stirring frequently until onions, beans and pancetta grease are mixed well.
Step 4: Add chicken broth or water and bring down to low heat.
Step 5: Cook for 45 more minutes on low and make sure liquid is at the bottom of the pan so that the beans don’t burn.
Step 6: Check seasoning levels and enjoy!
