4 ears of corn
1 cup diced tomatoes, ¼-inch dice
1 cup black beans, canned, rinsed and drained *not sold on Harvestly
1 teaspoon minced garlic
½ cup cilantro leaves, chopped
1 tablespoon minced jalapeño
¼ teaspoon kosher salt *not sold on Harvestly
½ cup diced avocado, ¼-inch dice *not sold on Harvestly
2 tablespoon lime juice
black pepper, as needed for seasoning
Step 1: Preheat the grill on high and grease the grates.
Step 2: Remove the silk and leave one layer of husk on the cob.
Step 3: Cover and grill the corn until lightly charred, 8-12 minutes.
Step 4: Once cooled cut the kernels off the cob.
Step 5: Combine grilled corn, tomatoes, beans, garlic, cilantro, jalapeno and salt.
Step 6: Add avocado and lime juice, stir gently to combine.
