Anyone can cook! Made with seasonal and organic zucchini, squash and tomatoes, this french provencal stewed vegetable dish is absolutely divine.
6 San Marzano tomatoes
2 yellow squash
Harvstly’s pasta sauce making kit
8 leaves of fresh basil
1 teaspoon of minced garlic
2 tablespoons of chopped fresh parsley *not sold on Harvestly
2 tablespoons of fresh thyme
4 tablespoons of olive oil
Step 1: Preheat oven to 375˚F
Step 2: Thinly slice the tomatoes, squash and zucchini to 1mm rounds.
Step 3: To make the sauce, follow Harvestly’s pasta sauce making kit for an incredible base to your ratatouille masterpiece.
Step 4: Pour the sauce into a round, oven-safe dish, and begin to layer the vegetables from the outer edge to the middle of the pan alternating between tomato, zucchini and squash.
Step 5: Once the round dish is covered in vegetables, mix the basil, garlic, parsley, thyme, olive oil, salt and pepper. Drizzle the herb seasoning over the vegetables.
Step 6: Cover the pan with foil and bake for 40 minutes. Uncover and bake for another 20 minutes.
Step 7: Your ratatouille is ready to serve. Enjoy!
