This week's loaf is made with whole grain spelt and California grown white winter wheat and filled with lightly toasted sunflower and flax seeds. Seeds are soaked overnight to aid in digestibility and nutrient availability. Ancient spelt is a nutty flavored, soft, high-protein grain that makes for a more tender crumb. Spelt has been cultivated for over 5000 years.
