Whole nude oats are a wonderful, gluten-free grain offering all the goodness of your boring old oatmeal with more taste & texture. Since your body takes longer to digest these yummy whole grains, you feel fuller longer. And these hulless oat groats have twice the protein, ten times the fiber & five times the iron of white rice! Along with very high levels of lysine (an amino acid that aids muscle growth), oats boast beta glucan (a cholesterol reducer), a low glycemic index, & healthy anti-oxidants galore.
Whoah, Nelly! Oats aren’t just for oatmeal! Toast them & prepare a pilaf or grind into fresh flour for super tasty gluten-free baking, or combine with ancient grains & seeds for a mixed grain porridge. This is a raw, living food. Sprout it! Basic Cooking Instructions
(Before preparing, remove any lingering hulls by floating them off in water.)
For 4 hearty servings, bring 1 cup oat groats, 3 cups water or milk, & 1/4 tsp salt to a boil.
Cover, turn heat down low & simmer, stirring occasionally, for 50 to 60 minutes, until liquid is absorbed.
The night before, combine 1 cup oat groats, 1/4 tsp salt, & 4 cups water.
Add fruit & nuts for a tasty twist.
Bring to a boil for 10 minutes, then cover tightly until morning.
Uncover & simmer, stirring frequently, for 10 minutes, or until liquid is absorbed.
