Satsuma plums taste sort of like a cross between a glass of full-bodied Paso red and a blackberry, so when we got our hands on a few pounds of them from Loo Loo Farms, we knew a jam was in order. The lavender enhances the floral character of the plums without overpowering their fruitiness. This jam utilizes the entire fruit and is sweetened with a syrup made from the plum pits. Canned using the hot-pack method, so no refrigeration required until after opening. We make our jams in extremely small batches, so once they're gone, they're gone... until next year! Pectin-free.
